Banana Cardamom Bread

Equipment
- 9" Loaf Pan
Ingredients
- 3 – 4 each Ripe Bananas
- ½ Cup Sugar
- ½ Cup Brown Sugar
- ½ Cup Vegetable (or Canola) Oil
- 2 each Eggs
- 2 tsp Vanilla Extract
- ¼ tsp Butter Extract
- 1½ Cups AP Flour
- 1 tsp Baking Soda
- ¾ tsp Salt
- 2 tsp Cinnamon
- ½ tsp Cardamom
Instructions
- Preheat oven to 350 degrees.
- Mix the ripe bananas with the sugars until incorporated.
- In a separate bowl, measure out the oil, extracts, and eggs. Add to the banana/sugar mixture.
- Sift the dry ingredients and mix into the wet ingredients until just incorporated. Careful not to overmix.
- Pour batter into prepared loaf pan and bake. Check at 1 hour. (In my oven, this usually takes about 1.25 hours to be completely baked.)
