Banana Cardamom Bread

Equipment

  • 9" Loaf Pan

Ingredients
  

  • 3 – 4 each Ripe Bananas
  • ½ Cup Sugar
  • ½ Cup Brown Sugar
  • ½ Cup Vegetable (or Canola) Oil
  • 2 each Eggs
  • 2 tsp Vanilla Extract
  • ¼ tsp Butter Extract
  • Cups AP Flour
  • 1 tsp Baking Soda
  • ¾ tsp Salt
  • 2 tsp Cinnamon
  • ½ tsp Cardamom

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix the ripe bananas with the sugars until incorporated.
  • In a separate bowl, measure out the oil, extracts, and eggs. Add to the banana/sugar mixture.
  • Sift the dry ingredients and mix into the wet ingredients until just incorporated. Careful not to overmix.
  • Pour batter into prepared loaf pan and bake. Check at 1 hour. (In my oven, this usually takes about 1.25 hours to be completely baked.)
