Peanut Butter & Caramel Pie with Pretzel Crust
This is one of those desserts where you only need 2 bites … but please do not let that discourage you. MAKE THIS PIE and watch your friends, family, and co-workers freak the fuck out!
Peanut Butter & Caramel Pie with Pretzel Crust
Equipment
- 9" Pie Plate
Ingredients
Crust
- 1 ½ Cup Pretzels Processed into crumbs
- ⅓ Cup Unsalted Butter Melted
Caramel
- 1 ⅓ Cup Sugar
- ⅓ Cup Water
- 1 Cup Heavy Cream
- ⅓ Cup Crème Freshe
- 2 Cups Honey Roasted Peanuts
Mousse
- 1 ¼ Cup Creamy Peanut Butter
- 8 oz Cream Cheese Room temp
- 1 Cup Powdered Sugar
- ½ tsp Vanilla Extract
- ¼ tsp Salt
- 1 Cup Heavy Cream
Instructions
for the Crust…
- Preheat oven to 350 degrees
- While the butter is melting, process the pretzels into crumbs
- Mix together then press into a 9" pie plate. Bake for 10- 15 minutes
for the Caramel…
- Dissolve the sugar and water in a small sauce pan. Boil until the syrup is a dark amber color
- remove from heat
- Slowly. I repeat, SLOWLY add the heavy cream. The hot sugar syrup will boil up once the cold heavy cream is added so please go slow to prevent boiling over and possibly burning yourself.
- Return to the heat and boil for a few more minutes to thicken up.
- Remove from the heat and add the Crème Freshe. Cool for 1 hour
- Once cool, add the honey roasted peanuts and pour into the prepared pretzel crust. Chill overnight in the fridge.
for the Mousse…
- Beat the peanut butter and cream cheese until smooth. Scrape the sides of the bowl
- Add the sugar and continue to beat until smooth. Remember to scrape the sides and bottom of the bowl to prevent lumps
- Add the salt and vanilla
- Whip the heavy cream until medium peaks then fold into the peanut butter mixture.
- Top the pie with the peanut Butter mousse
- Garnish if that's your thing. (Pro Tip: the mini peanut butter cups at Trader Joe's make great flair for this Bad Boy)
- Chill for at least 1 hour.
